In honor of Juneteenth students in a recent workshop at Allie’s Place Center for Culinary Education & Employment prepped and served a special Bistro menu inspired by the tradition of Shoebox Lunches (meals packed by Black travelers during the Jim Crow era who were denied access to restaurants and rest stops). These homemade meals—which were carried in shoeboxes—became symbols of resilience. Students learned about this history while practicing their culinary skills—preparing flavorful dishes like grilled chicken thighs with BBQ mango sauce, beef hot links with onion sauce, and vegan collard greens with peppers. Each lunchbox also featured black-eyed pea salad with buttermilk dressing, buttermilk cornbread muffins, and house-made pimento cheese.
